Because we work directly with select small growers throughout Colombia, we know when our coffee was harvested, how it was processed and exactly how many days passed at each stage before arriving at our café where it’s roasted in small batches to bring out the the best flavor profiles.

The specialty coffee industry has conditioned consumers to look for one thing: the roast date. And while roasting fresh and drinking a coffee before it gets old absolutely matters, it's only the final chapter in a much longer story.
Here's what most brands don't tell you about their “freshly” roasted coffee. That same coffee could have been:
- Harvested a year ago
- Sitting in a warehouse in a vacuum sealed bag for six months or longer
- Processed, transported and stored in ways that compromise quality and flavor
- Packaged poorly without valves, causing stale, uneven coffee with "grainy" or "unbalanced" flavor due to oxidation and poor degassing, often as a result of rushing a product to market
You can't create true freshness in the roasting room if the coffee was already compromised before it got there.

Harvest Timing
We work directly with select small growers who pick cherries at peak ripeness. This happens during precise harvest windows when the fruit's sugars, acids, and flavor compounds are at their decided ideal state.
Our direct relationships mean we know exactly when each lot was picked, ensuring we're roasting coffee at its flavor peak, before the coffee embryo dies, not months past it.


Processing Speed
Once coffee cherries are harvested, our partner farmers process their coffee immediately—within hours, not days—to lock in the vibrant flavors that make Colombian coffee exceptional. Because we work with small producers who prioritize quality over volume, they have the time and attention to process each lot with precision. We know their methods, their timelines, and their standards.

Transportation & Storage
After processing, green coffee must be transported and stored properly to preserve its integrity. Our direct partnerships mean coffee moves quickly from farm to our café—no middlemen, no lengthy warehouse stays, no mystery about where it's been or how it's been handled. This ensures the coffee that arrives at Vívolo is still at its prime.


Roasting Fresh, Not Just Often
Once green coffee arrives at our café, we roast it in small batches—not because it's trendy, but because it's the only way to control the quality over every batch.
By roasting in small batches we’re using only the amount needed, ensuring every cup is as fresh as it gets. That means the coffee you order hasn't been sitting around for months before we ever even lit the roaster.
